KFC's 11 Herbs and Spices

Mix with 2 Cups White Flour

2/3 teaspoon salt
1/2 teaspoon thyme
1/2 teaspoon basil
1/3 teaspoon oregano
1 teaspoon celery salt
1 teaspoon black pepper
1 teaspoon dried mustard
4 teaspoons paprika
1 teaspoon ground ginger
3 teaspoons white pepper

Middle East Chicken Rub

1 1/2 t. Cumin
1/2 t. Coriander
1 t. Cinnamon
1/4 t. Cayenne (more to taste)
1 t. Salt
1/2 t. Pepper

Produces incredibly juicy, tender, flavorful grilled chicken.

Kansas City BBQ Rub and Seasoning

1/2 cup brown sugar
1/4 cup paprika
1 tablespoon black pepper
1 tablespoon salt
1 tablespoon chili powder *
1 tablespoon garlic powder
1 tablespoon onion powder
1 teaspoon cayenne

Massage this rub generously into a trimmed slab or two of pork ribs, wrap tightly in plastic wrap and refrigerate overnight. Can also be used on chicken or in BBQ beans.

* use a quality chili powder that you've previously used and liked

Lapsang Smokey Dry Rub

3 Tablespoons Lapsang Souchong tea leaves
1 Tablespoon salt
1 Tablespoon sugar
1/2 Tablespoon cumin

Grind together until fine.

This makes an excellent rub for grilled chicken that results in very tender, juicy chicken.

Ras El Hanout

4 teaspoons coriander seeds
4 teaspoons cumin seeds
2 teaspoons ground cinnamon
2 teaspoons ground ginger
2 teaspoons ground paprika
2 teaspoons ground turmeric
2 teaspoons salt
2 Tablespoons ground black pepper

Grind together the coriander and cumin seeds until fine. Add the remaining ingredients and grind briefly until well mixed. Store tightly covered.

Used in Moroccan and North African dishes. "Ras El Hanout" translates to "top of the shop" or the best blend the spice merchant can offer.

This makes an excellent rub for grilled meats.

Za'atar

2 Tablespoons cumin seeds
2 Tablespoons sesame seeds
2 Tablespoons dried oregano
1 Tablespoon dried thyme
2 Tablespoons sumac
2 teaspoons salt
2 teaspoons pepper

Grind the cumin and sesame seeds together until fine. Add the remaining ingredients and grind together briefly to mix. Store tightly covered.

Used in Middle Eastern cuisine.

Chinese Five Spice Powder

2 Tablespoons Sichuan peppercorns
12 star anise
1 Tablespoon whole cloves
2 3-inch cinnamon sticks
1/4 cup fennel seed

Grind together, store tightly covered.

Pimenton

1/4 cup smoked paprika
2 Tablespoons granulated garlic
2 teaspoons each, salt and pepper

Use this for Spanish (European) dishes. Usually accompanied by a generous amount of freshly grated lemon peel.

Tip! "Pimenton" means "better than paprika" in Spanish.
