- 2 Tbsp creamy peanut or sunflower butter
- 2 Tbsp rice vinegar
- 1 Tbsp soy sauce
- 1 tsp sesame oil
- 2 tsp sugar or substitute
- 3 Tbsp vegetable oil
- juice from 1 small lime
1/4 cup cilantro, chopped
red pepper flakes to taste
Blend first 7 ingredients until smooth. Add cilantro and red pepper.
Serve on a bed of leafy greens with sliced, cooked chicken; diced red pepper and carrot; chopped cucumber; and lots of sliced scallions. Top with chopped peanuts.
