4 teaspoons coriander seeds
4 teaspoons cumin seeds
2 teaspoons ground cinnamon
2 teaspoons ground ginger
2 teaspoons ground paprika
2 teaspoons ground turmeric
2 teaspoons salt
2 Tablespoons ground black pepper
Grind together the coriander and cumin seeds until fine. Add the remaining ingredients and grind briefly until well mixed. Store tightly covered.
Used in Moroccan and North African dishes. "Ras El Hanout" translates to "top of the shop" or the best blend the spice merchant can offer.
This makes an excellent rub for grilled meats.
