Mexican Caviar



Ingredients

1/3 cup olive oil
1/2 cup white sugar
3/4 cup apple cider vinegar
Salt & pepper to taste


Bring to a boil, then set aside to cool.

1 green pepper, diced
1 red pepper, diced
1 onion, diced
1 cup celery, diced
Cilantro to taste (start at 1/4 cup, loosely packed)

Toss together in a large bowl.


1 large can black beans
1 large can lentils
1 small can corn niblets

Drain, rinse, add to veggie bowl. Toss with the dressing, then cover and refrigerate overnight.

Tip! Use any combination of colored peppers for visual appeal. Add a poblano or jalapeno for heat, if desired. If you can't find lentils, use small navy beans instead.
